Sciencegranny experimented again in the kitchen this evening…I offer the following yummy diabetic friendly dish.
- 1 cup of fresh blueberries or frozen blueberries
- 1 tablespoon of organic coconut oil
- 1 tablespoon of smooth or crunchy almond butter (organic)
- 1 tsp of cinnamon
- 1 tsp of honey
put all ingredients in a microwavable pyrex dish (small) and heat for 2 – 3 minutes in the microwave
- crumble one ginger snap cookie (real ginger and mollases) into the warm mix
I left off the ginger snap cookie because of my blood sugar issues. This dish has protein, fat and complex carbs and is very healthy.
